  • 5 large eggs
  • Two tablespoons butter
  • Five sea urchin tongues
  • 1 teaspoon chopped chives

Directions

  1. Crack and add eggs into a nonstick skillet or saucepan. Remember, do not stir the eggs or season them yet.
  2. Add butter and place over medium heat.
  3. Using a rubber spatula, stir frequently.
  4. Take off of the heat for 20 seconds. Then place back on the heat until your eggs are soft, which should take about 4 minutes.
  5. Add 1 sea urchin tongue, and stir. You want to chop it slightly with a spatula.
  6. Fold in the chives, creme fraiche, salt, and pepper and fold.
  7. Taste for seasoning and add if needed.
  8. Take off of the heat.
  9. Put one sea urchin tongue at the bottom of the plates.
  10. Divide eggs and top with the urchin tongues that are leftovers.

  • 4 large eggs

Instructions

  1. In a medium mixing bowl, whisk together the 4 eggs, half -n- half, and salt until the eggs are combined well. They should look a little foamy, and you should also be able to see streaks of yolks and whites.
  2. Take the unsalted butter and melt it in a small nonstick pan over medium heat. Make sure the butter coats the entire pan and starts foaming.
  3. Add the eggs in the middle of the pan and reduce the heat to medium-low.
  4. While you wait for the edges to set, use a rubber or silicone spatula to push the eggs from one end of the pan to the other.
  5. Continue with the spatula and pause to allow the uncooked eggs to settle on the warm pan and cook.
