Directions

  1. Line a baking sheet or pan with foil and lightly brush foil with olive oil or a thin layer of cooking spray—Preheat the oven to 450°F (230°C).
  2. Take the chicken pieces and pound them lightly to even the thickness. Be sure to use a light hand to avoid mushing the chicken breasts too much. You can place them inside a ziplock bag and use a meat pounder or a rolling pin.
  3. Take the chicken out of the bag and pat them dry—season with kosher salt and black pepper.
  4. Mix the breadcrumbs, grated parmesan cheese, dried oregano, garlic powder, salt, and pepper to taste in a shallow dish.
  5. In another dish or bowl, whisk the egg.
  6. Dip one chicken into the egg, make sure it is coated all over. Take it out using your fingers or a fork and drop it into the bread crumb mixture. Make sure the chicken is also fully coated in the breadcrumbs. You can assist this process by healing the breadcrumbs onto each side of the chicken breast.
