After the distressing Rachael Ray version of adobo, popular YouTube food content creator Uncle Roger has taken matters into his own hands.

In a new video, he flies to New York to visit Pig and Khao, a Southeast Asian restaurant by Filipino-American chef Leah Cohen. There, they whip up two versions of adobo.

Uncle Roger’s version of adobo follows the typical recipe while Cohen presents her “fancy” take on the dish. “I hope it fancy in the right way, and not in the ‘I’m Jamie Oliver and I put soba in ramen’ kind of way,” Uncle Roger quips.


Cooking from Pig and Khao’s kitchen, Uncle Roger starts off cooking the “standard” (though there is no standard, technically) recipe by marinating thick cuts of pork in soy sauce, vinegar, pepper, bay leaves, salt, MSG, and “garlic—the more the better,” he says.

He takes another jab at the failed adobo recipe, saying “Uncle Roger using canola oil. Don’t use olive oil, this isn’t the Rachael Ray Show.”

Cohen meanwhile cooks her version of adobo by first braising slabs of pork belly, marinated similarly to the standard adobo. She then makes a separate sauce using the traditional marinade mix with the addition of coconut milk, like some regional versions of the dish called adobo sa gata.

The braised pork belly is then deep-fried and placed over the adobo sa gata sauce alongside a sous vide egg.
