Fil-Am startup makes artisanal gelato with Filipino flavors

Dallas, Texas-based Sorbetera, a startup that has been delivering door-to-door artisanal gelato with Filipino flavors, held its first pop-up June 17.

Sorbetera founders, pastry chef Cessy Mendoza and marketing/operations manager Kai Ayala, joined more than 30 women-owned small businesses at Queens Market, at Vector Brewing in Dallas.

Mendoza has worked at top restaurants including Nobu (Las Vegas, Dallas, Houston), Abacus, Georgie’s, Villa Azur and the W Hotel.

The Filipino American duo offered gelato flavors Taho and Ube Halaya, popsicle flavors: Cantaloupe with evaporated and condensed milk and Maiz con hielo (iced sweet corn).

They distribute weekly to a growing group of fans, with varying dropoff points that change, depending on who orders, according to Luciana Gomez of Dallas.CultureMap.com.

Sorbetera’s gelato cups-to-go and popsicles feature other flavors such as Calamansi (Philippine citrus) and Langka (jackfruit), Ube with Latik (caramelized coconut curd), Taho (silken tofu curd, brown sugar syrup and boba), Abokado & condesada (avocado and condensed milk), Turon (fried banana eggroll).
